Celery Soup

  • 1 bunch celery, chopped
  • 1 medium Russet potato, peeled and cut up
  • 1 medium yellow onion, peeled and chopped
  • 3 cloves garlic, peeled and chopped
  • 1/2 cup dry white wine
  • 1 quart veggie or chicken stock
  • salt to taste
  • butter for sauteeing

Saute the onion, garlic, and celery in butter. Add the wine, stock and potato and bring to a boil. Lower the heat and simmer for 15 -20 minutes or until the celery and potato are tender. Remove from heat and puree. Return to pot and season to taste. This freezes very well. Be careful not to add to much salt as celery is already rather salty. The wine is optional.


Celery provides vitamins A, C, and K. It has the following nutrients in smaller amounts – folate, thiamin, riboflavin, niacin, pantothenic acid, vitamin B6, potassium, calcium, manganese, iron, magnesium, phosphorous, sodium, zinc and copper.
